This recipe is super easy, fast and very adaptable. You could add roasted chicken, sandwich meat, spinach and any number of additional toppings you wanted.
Roasted Artichoke and Pepper Panini
Roasted Artichoke and Pepper Panini
2 slices Firm bakery bread (sourdough, whole wheat--- any kind will do as long as it's not too soft)
2 tablespoons Roasted artichokes and red peppers (I used a jar mixture from Trader Joes)
1 tablespoon mustard
fresh mozzarella cheese, sliced
avocado, sliced
olive oil
Directions
1.) Turn on and preheat your panini maker. Use a paper towel and olive oil to grease the
paddles.
2.) Lightly brush each outside piece of bread with olive oil.
3.) Spread roasted artichoke and pepper spread on one side of your bread. Spread the other piece of the bread with the mustard.

4.) Place the cheese and the avocado on the bread and stack the two pieces.
5.) Place it on the grill and cook until cheese is melting and the bread has golden brown toast marks.
