Last week I made spent brain burgers, but I also made some cookies with the left over grains. This recipe I found on the website Brew Organic. I think they tasted pretty good and will make them again next time I find myself with spent grains.
Spent Grain Chocolate Chip Cookies
1/3 cup peanut butter
2 T. oil
1 cup sugar
1 egg
1 tsp. vanilla
1 cup whole wheat pastry or spelt flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 cup (or more) barley grains
1/2 cup chocolate chips
2 T. oil

1. Mix the peanut butter, oil, sugar, egg and
vanilla in a large bowl.
2. Combine the flour, baking soda, salt, barley grains in a bowl.
3. Slowly add the dry ingredients to the wet until just incorporated. Finally mix in the chocolate chips. If using wet grains, put enough flour so dough retains shape when plopped on pan.

4. Bake on oiled cookie sheet at 425F for 8 minutes.
